homemade granola


Remember last week when I said I'd have a recipe for you to pair with those freshly picked berries?  Well, wait no longer, here it is! 

You can eat this granola dry, with a splash of milk, over yogurt, or on top of ice cream.  Throw in some dried berries or fresh fruit and you have a wonderful breakfast, snack, or dessert! 

The other night I grilled up some bananas with rum, butter, and brown sugar.  Then served them (warm, of course) over vanilla bean ice cream and a sprinkle of this very granola - super tasty!

Homemade Granola

8 cups old fashioned oats
1/2 cup plus 1 Tbs. olive oil
1 Tbs. vanilla
1/2 cup plus 1 Tbs. honey
(to make your granola clumpier, add about 1/4 cup more honey)
2 cups nuts - any kind you like, chopped or whole

Pre-heat oven to 325 degrees.  Combine oats, oil, vanilla, and honey.  Spread on to (2) sheet pans.  Bake 10 minutes.  Remove and stir a little then add the nuts.  Bake 10 more minutes.  Remove to stir a bit.  Bake about another 10 minutes or until the granola has a nice golden color.  Allow to cool and enjoy!  Store the granola in an airtight container for at least a couple of months - if it lasts that long!
